White Chocolate Cranberry Cookies

While I was making a list of my most requested Christmas cookies to share on Sweet On Smith, these soft White Chocolate Cranberry ones come in a close second. So close, that they might be in a tie with the Chocolate Crinkles.

Sally’s Baking Addiction is the mastermind behind this delicious recipe. Not only does she offer this delightful combination of dark brown sugar, dried cranberries and white chocolate chips, but did you know she releases Sally’s Cookie Palooza every December, where she highlights ten new cookie recipes? In a world of baking greats, she is undoubtedly one of the Christmas Cookie Queens, and truly worth of a cookie crown. (Is that a thing? Can it be a thing?)

I always aim to share recipes that are easy to make and have pantry staples or the ingredients are otherwise easy to find. I’m a cranberry and Craisins fanatic, so I always have some on hand, but if you’re not like me, they can be found in any grocery store. (As a side note: Have you ever had Craisins and Mandarin oranges on your salads with grilled chicken? Absolutely delightful.)

I was pulling these jewel-studded cookies out of the oven as my husband was waking up, and tried to convince him since there is technically fruit in the cookie, that it is basically breakfast. Astonishingly, he did not agree with my opinion. I ate a second one on the spot, just to make a point.

While I am admittedly not always the most patient person when it comes to baking, I will make cookies that require chilled dough only if they are worth it. These soft White Chocolate Cranberry Cookies are worth every minute of the two hour chill time.

I would suggest if you are going to make this recipe, that you utilize a stand mixer. The dough becomes quite thick and if your hand mixer is like mine (read: not as functional as I’d like it to be these days), then it may not properly incorporate everything.

These cookies are always a huge hit whenever I take them somewhere, and disappear quickly. I’m sure they are on Santa’s wish list for Christmas Eve treats, but you should make a batch this week, just to be certain.
